Ingredients:
- 2 scoops Vanilla Protein Powder (I use Plant Fusion Complete Plant Protein in Vanilla or Plant Fusion PHOOD in Vanilla )
- 2/3 Cups Organic Coconut Flour
- 2 packets/tsp of Organic Stevia
- 1 tbsp Poppy Seeds
- 1 tbsp Baking Powder
- 1/4 tsp Baking Soda
- 6 tbsps Unsweetened Organic AppleSauce
- 1 large whole organic, free range Egg
- 3/4 Cup Organic Greek Yogurt
- Zest from one large lemon (approx. 3 tbsps)
- Juice from one large lemon (approx. 3 tbsps)
- 1/4 Organic, unrefined Coconut Oil, melted
Directions:
- Combine ingredients in bowl (1st six ingredients)
- In a separate bowl, combine moist ingredients (remaining 6 ingredients). Add coconut oil last being sure it is not too hot.

- Combine moist and dry ingredients, hand mixing just until all dry ingredients are moistened
- Spray two baking sheets with organic, non-stick coconut oil cooking spray
- Roll dough into balls (this recipe makes ~ 16 cookies), place on prepared baking sheets
- Flatten balls to form cookies (I use a mason jar for this)

- Bake at 325 degrees for 18-20 minutes, until just browned.
- Remove, cool, and ENJOY!!!!
